• 1 tbsp butter
  • 1 large onion, roughly diced
  • 2 garlic cloves, roughly chopped
  • 1 tsp roughly chopped fresh thyme
  • 1 bay leaf
  • 100ml red wine
  • 500ml of Freja Chicken Bone Broth
  • Seasoning



  1. Melt the butter in a deep pan over a medium heat, and add onions.
  2. Cook for 8-10 minutes or until the onions begin to soften and turn golden brown.
  3. Add the garlic and herbs and saute for a minute. Then deglaze the pan with the red wine
  4. Add the bone broth and turn the heat up high. Bring to the boil then reduce the heat and simmer.
  5. Cover the pan and cook for 20-30 minutes, or until the mixture reduces by half.
  6. Place the remaining sauce into a blender and puree until smooth.
