• 1 tbsp olive oil
  • 130g smoked pancetta cubes
  • 6 spring onions, finely sliced
  • 300ml Freja chicken bone broth
  • 400g frozen peas
  • 1 little gem lettuce, chopped roughly
  • small handful fresh mint leaves, chopped



  1. In a large, heavy bottomed frying pan pour in your olive oil and fry the pancetta cubes till crispy. Add the spring onions and gently fry.
  2. Add the bone broth, frozen peas and little gems and  simmer for around 10 minutes until cooked.
  3. Check the seasoning and stir through the fresh mint before serving.
