Ingredients:

  • 180g Quinoa
  • 500ml water
  • 1 sachet Freja Chicken Ramen Instant Bone Broth Powder
  • Veggies of your choice
  • Cooked chicken

 

For the dressing: 

  • 3 tbsp peanut butter
  • 1 sachet Freja Chicken Ramen Instant Bone Broth Powder
  • 1 tbsp soy sauce
  • 12 tbsp of water
  • 1/2 tsp ginger
  • 1 tsp chilli powder
  • 1 clove minced garlic
  • 2 tsp curry powder
  • 1 tbsp fish sauce
  • Juice of 1 lime

 

Method:

1. In a saucepan combine the quinoa, bone broth powder, water and a pinch of salt. Cook this on a medium heat for about 12 minutes or until all of the water is absorbed.

2. To make the peanut dressing combine all of the dressing ingredients listed above to form a smooth sauce, add a little more water to loosen the sauce if needed.

3. Serve up your buddha bowl with a base of cooked quinoa then assemble your veggies and cooked chicken before drizzling over the peanut sauce.
