Ingredients
- 1 tbsp olive oil
- 130g smoked pancetta cubes
- 6 spring onions, finely sliced
- 300ml Freja chicken bone broth
- 400g frozen peas
- 1 little gem lettuce, chopped roughly
- small handful fresh mint leaves, chopped
Method
- In a large, heavy bottomed frying pan pour in your olive oil and fry the pancetta cubes till crispy. Add the spring onions and gently fry.
- Add the bone broth, frozen peas and little gems and simmer for around 10 minutes until cooked.
- Check the seasoning and stir through the fresh mint before serving.
