Ingredients:
  • Green curry paste (1 jar or follow instructions on pack)
  • 300g cooked turkey
  • 1 carton Freja Chicken Bone Broth
  • 1 can coconut milk
  • 1 aubergine
  • 200g baby corn 
  • 200g tenderstem broccoli
  • 100g asparagus spears
  • 2 chillies, finely sliced 
  • 1 bunch coriander, roughly chopped
  • Rice to serve

Method

  1. Fry off the green curry paste in oil for 2-3 minutes then stir in the slides aubergine and corn
  2. Pour in 1 can coconut milk and 1 carton of Freja chicken and leave to cook for 8-10 minutes on a medium heat or until the aubergine is soft
  3. Mix in the broccoli and asparagus and cook for another 2-3 minutes and season to taste with salt
  4. Finish off with 2/3 of the coriander and serve with rice
  5. Garnish with extra coriander and sliced chilli and enjoy!
