Ingredients

  • 500ml Chicken or Beef Freja Bone Broth
  • 1 stick lemon grass
  • 5 spring onions – chopped and separated into whites and greens
  • 1 red chilli
  • 1-inch piece of fresh ginger
  • 1 star anise
  • 1 lime
  • 1 tsp sugar
  • Splash of soy sauce
  • Splash of sesame oil


Method

  • In a zip lock bag, place the ginger, lemon grass, the whites of the spring onions and half of the red chilli. Using a rolling pin, bash the contents a couple of times to release their flavours. Transfer into a large saucepan, add the star anise and the zest of the lime before pouring over the bone broth.
  • On the hob, bring the broth to a simmer, stirring occasionally. Add the sugar, soy sauce and sesame oil and simmer for 5 minutes. Drain into a jug for pouring and squeeze in your lime.
  • To serve, add the greens of the spring onions to a large cup or bowl along with extra chilli to taste. Pour over the broth and enjoy straight from your mug.
