Ingredients
- 2 tbsp beef bone broth powder
- 1 banana
- 80g oats
- 3 large eggs
- Optional: 2 tbsp milk
- 1 tbsp baking powder
- ½ teaspoon cinnamon
- butter, for frying
- your favourite toppings (nut butters, fruit and a drizzle of maple syrup)
Method
- Put the bone broth powder, banana, oats, eggs, baking powder and cinnamon in a blender for 1-2 mins until smooth. Scrape down the sides and blend it again so the oats are totally broken down. If it’s too thick, add the milk to loosen.
- Melt a little butter in a pan. Add half a ladle of batter to make a pancake (you should get 2-3 rounds of batter in one go), leaving a little space between each.
- Cook for 1-2 minutes, until bubbles start to appear on the surface and the underside is golden. Flip over and cook for another minute until cooked through.
- Serve with your favourite toppings.
